Guilt-Free Cheesecake

​Ingredients:

2 packages Fat Free Cream Cheese

1 cup Lowfat Greek Yogurt
1.5 cups Splenda or Truvia (or a natural sweetener such as Agave)
3 Eggs
1/4 cup Applesauce
1/2 pkg. Vanilla Pudding (Jell-o Sugar Free) *optional
1tsp. Vanilla Extract
1 tsp. Lemon Juice
1 tsp. Baking powder

1/2 cup plain breadcrumbs

Directions:

Preheat oven to 350° F

1) In a mixer, combine cream cheese, Greek yogurt, eggs, Splenda/Truvia, applesauce and mix until smooth.

2) Slowly add in the vanilla pudding powder, vanilla extracts, lemon juice and baking powder.

3) Mix until smooth

4) Spray baking form with nonstick spray and sprinkle breadcrumbs (about 1/2 cup) inside to coat the pan. (Make sure to get the entire bottom and edges, this will serve as the bottom crust of the cake)

5) Dump the excess breadcrumbs

6) Bake at 350° for 45 min

​7) Once cooled, cut into squares and serve with a dollop of fat free cool whip
